We have even just had Afternoon Tea week. On most weekends, social media is awash with snaps of people holding their teacups (pinkies extended, absurdly) and gorging on a four-star hotel’s dry scone. Tea appeals to all social classes, from the manual worker who sees it as something to moisten his sugar to the dowager countess for whom it is an elaborate ceremony involving warming pots, strainers, and rules about adding milk. First and foremost, you should be clear about the following: afternoon tea is not the same as high tea. Many, wrongly, call sandwiches and scones ‘high tea’ as they think this sounds grander than just ‘tea’. There are reports in some establishments they serve scones with aerosol cream. The top layer of the cake stand at afternoon tea will be for the cakes, although for the Victorians it housed little enclosed muffin warmers - hence the large arch in the stand. There are no set rules as to what is on offer here - nonetheless, they should be dainty and capable of being eaten in a few mouthfuls with the fingers or with a small fork. Cupcakes are not part of a proper afternoon tea.
