The idea started as a cheesy hash casserole but then it took a detour. I don't usually bake casseroles but lately I have been warming to ideas for lazy dishes. The kind that involves minimal work, e.g. prep, cooking, cutting, whatever. I took 5 medium potatoes and peeled them with my new Oxo swivel peeler which I love to use. I then took my Pyrex glass 8x8 casserole dish and put my box grater on it. I grated the potatoes, occasionally squeezing out the excess water. As I happened to have a lot of vegetables, I washed and chopped up: 1 medium zucchini 1 medium onion 3 cloves garlic 1/2 a red bell pepper 1/2 a carrot a few white mushrooms After some salt and pepper, and tossing to distribute in the baking dish, I splashed in some cream. I also had some very fresh sprigs of rosemary so I laid a few stems over the top, drizzling just enough olive oil on them to make releasing the essential oils a bit easier and not burn so quickly. I baked in a 400 degree oven until the top...
