This Pork and Fennel sausage roll is my favourite from Bourke Street Bakery, here is my version :). First roll out the rough puff:. 500g plain flour (4 cups). 500g very cold butter (freeze for 30mins). 1 tsp of sea salt (fine). 200 ml ice cold water (a little more if req). (makes equal to 4 sheets of puff pastry - can also try 3:2 flour:butter). Sift the flour into a large bowl with sea salt. Roughly grate into the bowl of flour. You need to see bits of butter. (Try using processor, grater or mandolin). Make a well in the centre, add 200ml cold water and combine, don't knead, adding a little more water if necessary, until you have a firm rough dough. Cover with cling film and leave to rest for 20 mins in the fridge or 5-7mins in freezer. Roll out on a lightly floured board into to a rectangle about 30cm x 60cm. You should be able to see streaks of butter in the pastry. Fold a third of the pastry into the centre, then fold the bottom third up over that. Give dough a quarter turn and roll out again to three times the length. Chill (in fridge for 30 mins or freezer for 7 mins) and repeat folding, rolling and turning twice more. Chill pastry again before using. 1 tbs extra virgin olive oil. 3 garlic cloves, finely chopped. 5 tbs (around 20g) fennel seeds, finely chopped. 1 small brown onion, finely chopped. 2 sticks of celery, finely chopped. 1 medium carrot, finely chopped. 1/2 tbs salt. Puff pastry (I used ready-made). Egg wash (1 egg and 1/4 cup of milk). Fennel seeds for sprinkling. Heat the oil in a saucepan. Add the garlic and cook for 30 seconds. Add the fennel and thyme and stir until aromatic. Add the onion and celery and cook for 5 minutes, until onions are browned. Add the carrots and cook for 20 minutes, until mushy. Put the pork mince in a large mixing bowl and add the veggie and spice mixture, salt, breadcrumbs and pepper. Divide the sausage meat onto the puff pastry in long sausages. Roll them up and paint the egg wash on top. Cut the sausage rolls into the size you want and sprinkle with fennel seeds. Bake for 40 minutes, or until the sausage rolls are golden brown. Macerate it with a trickle of olive oil, black pepper and teriyaki sauce in a bowl. Reserve it for later on. Cook the spaguetti in boiling water with salt and a tablespoon of oil. Cook it till 'al dente'. Wash it with cold water and reserve it for later. Cut the peppers, carrots and onions into thin long pieces. Peel the garlic and prepare a garlic pure using a grater. Mix the chopped vegetables, the baby corn cobs and the garlic pure in a bowl. Saute the chicken cuts in a wok with a trickle of very hot olive oil. After chicken gets cooked, add the vegetables with the garlic and the spaguetti without lowering the temperature anytime. Stir it for 5 minutes. Pour a bit of soy sauce...

after screwing around and making radish cake, i decided to ruin cheesecakes with inappropriate ingredients next. i also made a few normal ones, but the roasted garlic could not be resisted, and i did have a huge mass of cream cheese to use. the flavour is exactly as you'd imagine, though i used a bit too much rosemary in the topping. i prefer it to the sweet cheesecake. crust: 1/2 cup bread crumbs (reserving a little) 1/2 cup ground nuts 2 tbsp cornmeal chopped fresh herbs, if wanted 2 tbsp butter, melted 1 tbsp vanilla sugar custard: 1/2 lb cream cheese 1 tbsp sugar 1 tbsp vanilla sugar 2 eggs 1 head of roasted garlic, peeled and mashed nutmeg topping: 4 medium red onions 1 tbsp balsamic syrup olive oil rosemary roast the garlic (on its own in oil, if you like - i did mine over 1 1/2 hours in some tomatoes). set out the cream cheese (or ricotta, either are fine here) and eggs so they come to room temperature. preheat the oven to 350ºf. lightly butter the bottom and sides...
