It was the perfect wedding out on a family farm in the hills of the bluegrass followed by a fancy dinner downtown with less than twenty people in attendance. A pretty awesome shindig if you ask me, likely one of the best weddings I’ve attended. As the sister of the bride, you’d think I would have had a plethora of responsibilities. However, due to the simple, efficient, and straight-forward nature of the event, I did practically nothing. I had one job. I was in charge of making the cucumber (aka Benedictine) sandwiches for the horse ovaries (hors d’oeuvres to you fancy folk) preceding the ceremony. Simple job. Did they make it to the ceremony. It took five people to get the damn sandwiches to the wedding. One to make them (me), three to turn back and go rescue them when the caravan was halfway out of the neighborhood (Mom, Dad, and my aunt), and one to retrieve them after they got left in the car upon arrival (Dad). You’d think these sandwiches were destined for failure, but they were essential. After all, cucumber sandwiches are little clouds of refreshing deliciousness that could make a rave in a swamp feel like a debutante ball. But the cucumber sandwiches are damn good. These particular ones used to be made by my mom’s mom, Mema, when we had company. And always with the crusts cut off. Because crust is not classy. So the sandwiches ultimately made it to the wedding. Which is fortunate, because there’s no way I could make them on the fly. Excuse me, do you have a cucumber, an onion, a cheese grater, and a roll of paper towels. That’s right, those cucumbers and onions aren’t sliced, they’re grated with straight up elbow grease. Emily, why don’t you just throw them in the food processor. That is not what Mema would do. That is what lazy, entitled fools who have no pride in the integrity of their sandwiches would do. Plus, it takes less than thirty seconds because of how water-dense cucumbers are. However, I will admit, for some little tea sandwiches, the process does seem rather strange. The only hardware you need is a cheese grater and an electric mixer of some kind. You can mix the cream cheese filling by hand, but there’s a time and place to be old school. This is not one of them. Next, round up your ingredients, which include a cucumber, sweet onion, and two packages of Neufchatel (1/3 fat cream cheese). Grate the cucumber and onion onto a plate with the cheese grater (on the largest holes). You’ll need HELLA handfuls of paper towels to press onto the cucumber because you want to get as much moisture out of the shredded cucumber as possible. Otherwise, the cream cheese mixture will get slimy and your friends will think you’re trying to poison them by serving sandwiches filled with chunky Elmer’s glue. This might take awhile, but as soon as the paper towels don’t get soaked easily, you should be good to go. Once the cucumber is relatively dried of excess liquid, toss it into the mixer along with the onion, cream cheese, and a little salt and... Mix on medium speed until everything is well incorporated and can spread easily. To prepare the sandwiches, you’ll need two loaves of Pepperidge Farm Very Thin Sliced white bread. You’ll want to assemble the sandwiches first, spreading a layer of filling in each, before cutting the crusts off. Finally, cut them diagonally to make two triangles. They’re like a childhood memory with the crusts cut off…. Except WAY better. Stay classy, friends.
