We eat soup year round, but it becomes a weekly addition to our meal plans in the fall and winter. Even though our temps aren’t quite reflecting it yet, fall is coming, it’s right around the corner. Flavors are turning to apples, pumpkin, and meals like stews and soups. The best part of early fall to me, aside from all of my favorite foods, is that so many gardens and farmers markets are bursting with home grown veggies. I say we combine those two favorites of mine, and make dinner. Soup has always been my favorite meal, it’s just so comforting to me. I remember coming home from school, and getting that whiff of dinner when I walked into the house. “What’s for dinner. My mom would tell me ‘soup’ and I was elated. Not only did that mean I was going to enjoy dinner, I would enjoy it for lunch the next day, too. My oldest daughter is just like that. When she asks what’s for dinner, and say soup, she is thrilled. She will eat soup for breakfast when given the chance. She loves minestrone, and I decided my website wouldn’t be complete with out a recipe for her to refer to when she wants to make it herself someday. I love these little ring pasta noodles I found. Try them when you try this recipe. I love how good FOR you this recipe is, too. I felt content knowing that my family had a wonderful wholesome meal, even on a night that we rushed from school to football and cheerleading, and weren’t eating until three hours past our normal family dinner hour. A few weeks ago I received a free copy of Cook's Illustrated Magazine, as a gimmick to solicit a subscription. Well, being a sucker for culinary magazines, I decided to take a look. Amazing. The extent these guys will go to in order to test recipes is mind-blowing, and what's more important is that it seems that what they're aiming for in their quest for the "perfect" anything are the same qualities that I like in those dishes. So far I've tried making the Perfect Oven Fries, a smashing success, and these Better Blueberry Pancakes. They were delicious, let me tell you. A perfect lazy sunday morning breakfast. Yes, you read that right. Beets. This recipe drew inspiration from a number of sources. A few weeks ago, an episode of Good Eats aired where Alton (obviously thematically inspired by Terry Gilliam’s The Imaginarium of Doctor Parnassus) talked about beet juice being used to provide the red color to red velvet cake. I thought that beets might make a good stand-in for carrots in carrot cake, and maybe I’d end up with red or pink cakes that would thrill my pink-obsessed daughter. A little searching turned up a number of similar takes (like this one at YumSugar), but they all had one thing in common: baking caused the color to fade, which would have defeated the purpose. So, I grabbed my copy of McGee’s On Food and Cooking, and found that the pigments in beets (betalains) are affected not only by temperature but by pH. Acid pH was associated with the red color I was going for, so I started with my absolute favorite carrot cake recipe (originally from the folks at Cooks Illustrated),...
