I follow 12 Tomatoes on Facebook and they posted this recipe. They say they adapted the recipe from Gavin Murphy. I did things a tiny bit differently. here's the recipe as written, and afterward, what happened in my kitchen, and how it turned out. 2 cups cooked quinoa 1/2 cup cannellini beans, rinsed and drained overnight, optional 1/2 cup Parmesan cheese, grated 1/2 cup panko breadcrumbs (or seasoned breadcrumbs) 2 zucchinis, grated 2 cloves garlic, minced 1 large egg, plus 1 egg yolk 1... Wrap grated zucchini in paper towels and wring them over the sink to squeeze out excess moisture. If beans are not already dry, pat them dry with paper towels, then transfer them to a large bowl and lightly mash them. Add zucchini, quinoa, garlic, Parmesan, panko and basil to the bowl, and season everything with salt and pepper. Add your egg and egg yolk and, using two forks or your hands, mix together until combined. Heat 3 tablespoons olive oil in a large skillet over medium-high heat and let the pan get really hot. Form quinoa mixture into 2-3-inch patties, then carefully drop them into the hot oil. Note: only fry a few pancakes at a time so that the pan stays hot. Cook for 3-4 minutes per side, or until golden brown, then flip and repeat on other side. Transfer cooked patties to a paper towel-lined plate to drain, then serve immediately as is, or with sour cream or yogurt. Obviously, everything will hinge on how big your zucchini is. It might make more sense for them to give you a measurement of so much squeezed zucchini vs "two". I've seen zucchini in every shape and size. I just used two of what the grocery store had. I'm not sure what they mean by rinsing and draining the beans overnight. It almost implies they are using dry beans. but that wouldn't work. And if they are canned beans. why would you drain them overnight. I took a can of beans, emptied them into a sieve, rinsed them, drained them, measured out the 1/2 cup, dumped them into a paper towel and patted them dry. Then dumped them in the bowl and mashed them. This adds protein and texture. I THOUGHT I had enough Parmesan, but alas, I was a bit short. Next time I'll put more in. I used what I had. And I had Panko, so that's what I used. It calls for one egg and one egg yolk, and I really hate trying to remember to use partial things later on. so I used two eggs. I used avocado oil. I had to add a bit more oil in the pan for each batch, but it doesn't take much. I didn't feel like making formed patties. I have a thing about getting my hands really gummy. So I used a curved rubber spatula (one that's slightly spoon shaped vs flat), and I would make a scoop and press it against the side of the bowl and then slide it off into the hot pan from the spatula. These may be a bit fragile so don't much about with them too much until they get their nice crust on them. I sort of gently mashed them down too. Mine turned out much flatter, much browner and much crispier than I imagine the ones in the photo above were. more crispy than tender and wet. It's pretty easy to tell when to turn them. I really liked them. They would be great with Tzatziki, or just plain yogurt or sour dream. Some dill wouldn't hurt either. Because of the Quinoa (which is really a seed more than it is a grain), egg, cheese, and beans, there is plenty of protein in them. Hubby would likely never go for that, and all he really did was take a bite and say they didn't suck. I will try reheating the left-overs for myself by placing them in a dry, non-stick pan on low to keep them crispy and heat them slowly. They will get soggy as soon as they go in the fridge, and nuking would yield a soggy product too.

Got a cheap tiny cast iron skillet, and was hoping to use it as a gong. I figured it'd stop a .22, but nope, they just blasted right through (and the big missing chunk was taken out by a 9mm). You know those Westerns where a guy uses cast iron as a bullet proof shield? Yeah, totally would not have worked. In fact, the fragmentation effect would probably be more devastating than a solid shot.
