At some point during the early morning hours, I must begin thinking about that first cup of coffee. And while I was up -- 4 a. m. -- I weighed whether to go back to bed or make a cup of coffee. I went back to bed, woke up at 6 a. m. or so, and my first thought was a cup of Colombian coffee. Coffee is grown all around the world, but in a fairly narrow band along the equator. The climate needs to be hot and humid for coffee trees or bushes to survive. Coffee will grow at almost any altitude, but the better coffee beans grow from, say, 1,200 meters on up to 2,000 meters. Some of the best coffee I have ever consumed was from a 1,900-meter coffee plantation. Coffee grows in countries such as Peru, Brazil, Colombia, Kenya, India, Ethiopia and others. Coffee originated, most likely, in Ethiopia, where a goat herder saw his goats grazing on a bush. He liked it. And, at some point, people began to roast the coffee beans, grind them and make coffee. Coffee grows on a bush or small tree and resembles a pie cherry. Coffee goes through an elaborate process to remove this pit or coffee bean from the skin covering. This green coffee bean is roasted in a multitude of ways until it turns color, from tan to almost black. At somewhere around 400 degrees, give or take, some the green coffee beans will begin to pop and will sound like popcorn. They don't blow up like popcorn, but sound like it. I stop roasting mine when they are just beyond this first pop or crack at a tan color to light brown. French-roast coffee is almost black. Regular-roast is brown. Starbucks blond roast is a light brown. Regular Starbucks is dark roast or almost black. Once you have your beans roasted, you can grind them in a bunch of different ways. The best are burr-mill grinders. My brother bought me a hand-crank grinder several years ago. Some of the most popular are the blade grinders. You can grind the roasted beans and end up with a rather coarse grind or almost a powder. The grind will affect the taste of your cup of coffee. Now to brewing the coffee. There are a bunch of different brewers, from the Keurig to the Bunn to the old drip brewers. Then there is the Aero Press, the French press, vacuum brewers, drip brewers, Clever coffee drippers and more. I mostly use a Clever coffee brewer. Parengo in Sikeston, Missouri, uses a pour-over, while Cup 'n' Cork in Cape Girardeau uses the Clever coffee brewer. I don't know what Dynamite coffee in Cape Girardeau uses. We end up with a set of variables that will affect your cup of coffee. The origin of the coffee beans is the first variable. Coffee from Kenya won't taste anything like coffee from Peru or Colombia. The roast makes a difference. Beans roasted to a light brown or tan or city roast won't taste anything like the beans roasted to a dark roast or full-city-plus. I pretty much use a Clever coffee dripper all the time. I use about 1 1/2 tablespoons of freshly ground coffee beans for every cup of coffee. I add about 200-degree water to my ground coffee and let it sit for two to three minutes. The longer it sits, the more oils and such will be extracted from the ground coffee. I then set my Clever coffee dripper on my favorite coffee cup and let it drain into the cup. My brother in Nebraska was the one who got me started in roasting my own coffee. I still will drink Folgers or Maxwell House, but home-roasted, home-brewed coffee is my choice. As I finish this article, I am enjoying a cup of Colombia Timana de Huila coffee I roasted. If you are happy with the coffee you are drinking, I'm glad. Try the coffee at our local coffee shops. Check out where the coffee comes from and what type of roast. Watch as they make the coffee. Instead of getting a large cup, get a small cup and then get a second cup of something different. Ask questions, and then ask more questions. And now for that next cup of coffee.

I don't drink a lot of coffee but what I do drink needs to be quality. Well roasted beans, hand ground with a manual coffee grinder using ceramic burrs, not too fine, poured through with hot (not boiling) water and then either hand pressed or allowed to brew in a cafetiere for 5 minutes. It's not the best coffee in the world nor is this the best method to prepare a cup of joe but its the way I do it. More than anything else it's the ritual I love. So it was a pleasant surprise to find that my coffee felt the same way :)
